The ingredients of Pempek Palembang

A. For fish cakes:
  1. 500 grams of mackerels, grinded or you can also use other fish fillet, such as herring and catfish
  2. 3 egg yolks
  3. 200 ml ice water
  4. 2 tablespoons salt
  5. 1 tablespoon of white sugar
  6. 1 teaspoon of white pepper powder
  7. 1 teaspoon garlic powder
  8. 3 tablespoons vegetable oil
  9. Nearly 800 - 1000 g sago / starch
B. For Cuko:
  1. 250 g of brown sugar
  2. 2 tablespoons of white sugar
  3. 6 cloves of garlic, do not need to peel
  4. 25 grams bird's eye pepper
  5. 1/2 teaspoon salt
  6. 1 tablespoon yogurt (depending on how you want to sour soup)
  7. 250 ml of water
C. The additional Ingredients:
  1. Cucumber
  2. Pasta, cooked eggs
  3. Minced dried shrimp
D. The steps to make Pempek Palembang:
  1. Grind over all the ingredients, unless tapioca flour. Mix overall well.
  2. Take 1 tablespoon of the mixture of fish, add about 2-3 large tablespoons of sago flour, mix to form pempek as you wish. Set aside the formation of the rest of the dough until the end.
  3. Boil the water using a frying pan and cook the pempek about 15 minutes. When they come to the surface, meaning it was cooked. Set aside.

  5. To make the cuko, boil water with all ingredients until sugar was dissolved. Grind the sauce using a food mill or a hand mixer.
